Sicilian Meatballs

Since Iโ€™m Italian, Polpette (meatballs) are a big part of my heritage. While they are traditionally paired with a vegetable side (check out eggplant ragu for a healthy alternative), thereโ€™s something about the spaghetti & meatballs pairing that just feels right.

Ingredients:
12 ounces ground turkey
3 tablespoons of gluten free breadcrumbs (or almond meal)
1 Garlic Clove
2 tbsps Pine Nuts (optional)
Red Pepper Flakes (optional)
A few leaves of Parsley
Parmigiano (Parmesan)
1 tbsp Ricotta

Finely chop parsley & mince garlic

In a large bowl, combine breadcrumbs, pine nuts, garlic, parsley, ground turkey, ricotta, red pepper flakes, 2 tbsps of parmesan, salt and pepper.

Mix well and form into balls

Heat 2 tablespoons of EVOO or Coconut Oil in a large pan over medium heat

When pan is hot, add meatballs in a single layer and sear, flipping until browned on all sides (~ 10-12 minutes).

Serve with your favorite pasta, sugar free tomato sauce or on their own!
